Oenologist’s Notes

Initially, the grapes are crushed and remain in skin maceration inside the pneumatic press to extract the Muscat aromas present in the bark. After that, the grapes must is statically clarified and sent to a special tank (Autoclave) where the sparkling wine is prepared by the Asti process. The frothing takes place in this tank with pressure and temperature control until it reaches an alcoholic strength of 8.5% Vol. At this moment the fermentation is stopped by the rapid refrigeration of the product. The product remains in the cold for 15 days for complete stabilization and is then filtered in an isobaric system to another autoclave, from where it will be bottled at the right moment.

Visual aspect

Straw yellow coloration with greenish reflections, with clear and bright appearance. Perlage fine, intense and persistent.

Aromas

Profile rich and nice aromatic. Clear and fine aromas, reminiscent of citrus fruits and white flowers.

Palate

Palate harmonious and with good freshness. It presents light, young and balanced. Its aftertaste is intense and persistent.
