Its fermentation at low temperature produces a fine and persistent pearl, with greenish traces. Harmonizes perfectly with canapés, light dishes, poultry and fish.

Oenologist’s Notes

Prosecco base wine is fermented in stainless steel tanks with selected yeasts and temperature control. The fermentation temperature does not exceed 14ºC, in order to preserve the typicality and freshness characteristic of the Prosecco variety. The sparkling is elaborated by the Charmat Method, where the frothing is carried out in special tanks (autoclaves), being daily controlled its temperature and pressure. The sparkling wine remains in contact with the yeast for 2 months, aiming to enrich its aromatic profile and gain complexity in the mouth. After 2 months, the sparkling wine is filtered and bottled.

It has a rich visual appearance, with straw yellow coloration and greenish reflections. Thin, intense and consistent perlage.
